According to a friend who visited Joe & I in Saigon from England some years ago, this dish was his “#1 yummy” Vietnamese meal – Đậu Hũ Dồn Thịt.  It’s also one of Joe’s favorites.

I’ll begin with fresh cubes of semi-firm tofu. Each tofu block will be slit and stuffed with my home-made mixture of ground pork, shallots and various Vietnamese herbs and spices. The pork-stuffed tofu will be slowly simmered in tomato and fish sauce broth. I’ll serve this over a bed of Vietnamese broken rice.

Along side, I’m including a serving of sautéed Asian greens and salted-egg. Major Yum!

Next, and just as they do on the street corners of Saigon, I’ll be preparing sweet corn kernels in a blend of butter and oil and stir-frying them together with dried baby shrimp, fresh green onions and a few spices.  A truly classic Vietnamese street food treat!

 

Finally, I’ll be offering a serving of my chilled home-made Vietnamese yogurt as a refreshing after-dinner treat (or as a yummy morning snack the next day)!
